Would a Jack Dempsey do well in a 45 gallon (36x14x16 or so) with a Convict community? Theres a couple of pairs of cons and a lot of smaller, unpaired ones, but theres lots of cover and stuff so it doesn't ever get bad, just smaller scraps between the male and female pairs, nothing serious.

No don't even think about it, a Jack Dempsey can only be kept with others if it is put in with them when it is small, but that doesn't work all of the time, because he will get bigger than the others then eat them too. So adding a Jack Dempsey to your tank is a bad idea.

I just wanted to add that with the convict pairs that they would tear a young JD to shreads and an older JD would just kill the cons

Alright, thank you, I won't then. But, what about a pair of Firemouths. I could grow them fairly large in my 33 and then transfer them. I like to think of my Cons as fairly civilized, theres half inch fry in there that are away from their parents and no one bothers them at all, or is this normal?

Spawning Convicts will not appreciate you adding any other cichlids to the tank, and the cichlid you add certainly won't appretiate it when it's attacked. Cichlids are competetors and threats to each other, and convicts are far from civilized - they run off simple instinct, which includes destroying any potential threats. Leave it as a species tank for all the fish involved.
