I need to start a fishless cycle in a rescued tank that already has a mountain shrimp. Will the little guy be ok with the ammonia?
 
No, shrimps are very sensitive to ammonia.

You don't need to do a fishless cycle anyway, as long as the filter hasn't been washed in tap water, because there will be some bacteria already that's coping with the (admittedly very small) amount of ammonia being produced by the shrimp.

Just add fish very slowly, and test often in case you need to do extra water changes while the bacteria catch up to the extra 'load'.
 
shrimp is giving ammonia in the water already.. just like fluttermoth said just add fish in slowly :)
