I have a pair of these myselfnow. I'm not an expert, but I have been researching them now. What I've found out is that they do like soft water. Honestly, mine's a bit hard for them. So, I tossed in a bunch of driftwood, which is having a softening effect on the tank. I have been feeding mine and letting them hang around in a dark tank right now, since they seem to be more nervous than most fish. I think it just takes them time to get used to their surroundings.
 
I have kept the light off. No loud noises( except the vacum, which is brief).All i know is, the water he was kept in for 2 months ios the same water i have( nexcept they use copper!) so it cant be a water problem( as far as aclimation goes)!.
 
He might have just gotten a little too stressed out with his move to your tank.

Rams are one of my favorite fish, and I hope you try them again in the future. Just remember like others said, they like soft, acidic water. They also like their water really warm. Mine always did best at 79-81 F.

As for his eating problem, my Rams NEVER ate flake food. All my other fish would eat it but all my rams just spat it out like yours did. I fed mine freeze dried bloodworm and they loved it and were very healthy eating it. You can find it at your lfs, and it should be pretty cheap too, 5-6 bucks.

Wel, i picked up 3 angelfish, and i already have 1 angel fish in hope's of a pair. I got a albino one from my fav lfs( where the ram came from), and 2 marbled angel's from petsmart( dont like them, but wwas given a gift card). They all seem fine for now. The ram ate flake at the lfs, and my freind there said i probably didnt aclimate them right. Thnx,
