How do I .... ?

I want to switch both my guppy tanks from gravel to sand bottom. How would I do this ? How will it affect my tank's cycling ? Any information or advice is greatly appreciated.

Also, if I used the gravel from these tanks, and some of the water as well, and put them in my betta's 1-2 gallon tanks, would they be considered cycled ?
