Sorry he passed. Keep an eye on your remaining cory. Cories do need to be in groups though so ideally you'd want to move him to a bigger tank and get him some friends after a suitably long monitoring period.

My water I use is soft and I try do water changes every week or so but I live somewhere where water evaporates very quickly so with me pouring more water in sometimes by the end of the week it has already been a full water change but I do a small one anyway

Compensating for evaporation IS NOT a water change. The only thing that evaporated is water, excessive nitrates, ammonia or other toxins are still in the water, only more concentrated with less water due to evaporation.
A water change is completely different than topping off a tank.

Sorry to hear that he's passed away. He could've already been weaker. And healthy fish know when a fish is weaker and in general, they'll chase such a fish away or harras it.
