Have seen these for sale for little cost, do they really help with nitrAte and do the fish benifit from em for food source etc?

Well, it's not like there are really any disadvantages to them, so if you want one go for it. Fish will use them for shelter, if you have fry then the moss itself is handy for hiding in and also holding food.

plants do remove some of the nitrates from the water, but im not sure on how much.

but why should you be worried about nitrates if your doing weekly water changes?

Perhaps he's underfiltered or wants to completely remove or reduce the number of needed water changes?

No that's what it said on the sticker on the tank they were in, didn't know if they did something that 'normal' plants did :)

Obviously any reduction in water changes is an advantage but that wasn't the reason for askin about them.

yes any reduction is an advantage but a stable mature tank can slowly move to bi-weekly water changes im do monthly 40% water changes, because of time etc

Fish tend to like them and will use them for shelter, fry will hide among the moss, on the whole they are something people either like or dislike. The moss like all plants helps with nitrates. Its personal choice really.
