What is the easiest grassy-type aquatic plant that doesn't require any special care like CO2 injections and such, but could basically live in filtered water and fish waste? Something that I could just plant into the gravel.

I'd like to know as well , I was thinking dwarf sagitaria
 
Echinodorus Tenellus, Lileaopsis Novazealandae (sp).
Eleocharis Sp..these can be harder to grow.
Some of the Sagittaria species are cool but some can grow large.

Whatever plants you use you'll have to make sure they get enough light

;)
