I currently have two female gouramis 1 golden 1 opaline I also have a male moonlight I'm just curious if they would breed ? Or if it would be better to get another male 3 spot variant and if so what would be a good mate for my moonlight not necessarily wanting to breed but in future I might any advice welcome thanks for your time
 
To my knowledge, they will not naturally hybridize. This is good, as who needs hybrids when we can celebrate natural diversity?

You would most likely face aggression issues with more than one male of any species in an average tank. A moonlight would go well with your moonlight. Other than the 3 spot forms, these aren't varieties, but distinct biological species - ie, not retrievers and labs, but cats and tigers.
 
What @Gary_W said. To be clear your 'golden' and 'opaline' are man-made variants of the same species Trichopodus trichopterus, commonly called "The Blue" or "Three-spot Gourami. Your Moonight is a different species, Trichopodus microlepis, and the only suitable mate is a female Moonlight. The two species will not hybridize.
