So my betta dimidiata spawned and the male is carrying the eggs. I moved the female so she doesn't stress him. If its successful and the eggs hatch I will need food for the fry.

I could hatch brine shrimp for them. How do I culture infusoria?

Just add leaves to the aquarium. As the leaves break down, it will naturally produce infusoria.

I have a couple small plum leaves in there right now, but I'm out of brown leaves. Should I buy Indian almond leaves?

That would be a better solution, but there are other ways to culture infusoria without using leaves.

You don't normally need to move the female unless the male gets angry with her.

It takes a month or more to get infusoria and green water cultures going so you will need to use boiled egg yolk. The following link tells you how to culture different food for baby fish, including boiled egg yolk, which is found under the heading of Emergency Fry Food.
