I have a Gold Severum and i just wanted to give you a word of warning, altho its mentioned in their profile they are "Peaceful Giants" they can be quite aggressive too in my experience.
Mine lives with Green Terror, Jack Dempsey, Blue Acara, Salvini & Firemouth Cichlids. All in all a pretty aggressive set up, now he dont mess with the Green Terror or the Jacks but he will chase off the Blue Acara, Salvini & Firemouths when they get in his way, these fish are much more robust and larger than the Dwarf Gouramis you intend to house with a Gold Sev. Im not saying dont house them together they may be perfectly fine, but just keep an eye on them when introduced to each other.

1: Sevs like to think they are the king of their tank, and chasing off other smaller cichlids is normal behavior IME
2: Sevs will usually (not always) only mess with other cichlids if they are present, they see them as competition.

Even chasing other smaller fish is normal, sevs don't usually get to the point of actual fighting, they just like to boost their ego by scaring their lesser tank mates.
;)

I would concur with that, aswell as the Cichlids i also have some Corys, A Blue Loach, Yoyo Loach & Syno Eupterus housed in the same tank, however they are all bottom dwellers and do not get harrased by ANY of my cichlids including the Severum. I agree with the Ego thing, he knows who he can chase away and stays away from the ones that he know will probably fight back.

400 ltr tank (living room show tank)

1 Syno Eupterus
1 Blue Loach
1 YoYo Loach
3 Sterbai Corys
3 Aggasiz Corys
2 Albino Corys

180 ltr tank (computer room tank)
2 Sajica (male & female)
about 80 or so Sajica fry

125 ltr tank (childs bedroom tank)
1 Betta Splendens
1 Black Phantom
1 Rosy Tetra
1 Rummy Nosed Tetra
8 Neons
3 Glolight Tetras
1 Dwarf Gourami
1 Sparkling Gourami

60 ltr tank (currently empty in the shed tank)

Before someone tells me my 400 is a bit overcrowded... i already know that, its a temporary measure as some of those fish housed there at the moment live in the 180 normally (most of the fish in the 400 are not full sized fish either so it just reads worse than it actually is).

And they are all from the Juwel Rio range of tanks apart from the 60 ltr.

I'm a huge loach fan  I think probably my favorite is the weather/dojo loach, that's a great choice! But mine was torn up really badly by my cons before I moved him into my mom's tropical community tank. The cat digs that fish. But my yoyo loach gets along fine even with a convict. Their interaction with eachother is a lot of fun to watch since they're always chasing eachother and sneaking up on eachother. I'd definently suggest getting a few yoyos! Kuhlis are fine too, they're small but they're great at hiding. I have one living with my convict and the yoyo loach. I didn't even know he was alive for at least a year though because he's so good at hiding. Zebra loaches are a little small for the convicts, I wouldn't suggest them with larger cichlids.

I know you didn't need all that...but all in all get a dojo and some yoyos!
