Fin Rot Or Gourami Gnasher?

I've had my tank set up for about 2 months now and everything has been going great. I've become quite obsessed with testing the water (almost every day) and have been performing a lot of 25% and 50% water changes when needed. Ammonia was nill, Nitrites were almost nill (ever so slight pink tinge on white paper), Nitrates were fine and so was PH.
 
With this in mind I introduced two gourami's to the tank and a few more guppies.
 
Within days the tails of the new and existing guppies started shredding. Convinced it was fin rot, I did an 80% water change and dosed the tank with aquarium salts and interpet anti-fungus and finrot.
 
The next morning I tested the tank and my Nitrites had shot up to 0.3! I immediately performed a 50% water change and avoided using any treatments in case they were affecting my filter.
 
The morning after that I tested again and nitrites were at around 0.15-0.2. So I did the same again, 50% water change and this time I also dosed the safestart in the hope of replacing any lost bacteria.
 
Today I've also performed a 25% water change without any testing (running low on the API kit).
 
 
HOWEVER, I'm beginning to wonder if my fish have fin rot at all. My wife noticed one of our Gourami's getting really aggressive towards the other fish. He has been chasing some mollies around the tank and even going after the other Gourami. Just this evening I also caught him chasing down a guppy. Could he be nipping tails?
