How can you tell if you have given the fish enough food as they always seem desperate to get at anything that is put in the tank?

Thats just how fish act.
How much times and how big pinches of food do you feed them?

one pinch of flake in the morning and a pinch of brine shrimp in the evening

5 leopard danios 2 guppies +several fry 3 black widow tetras 3 rainbow tetras

that should be okay. so it's just the fish.

Well it actually depends on how big your pinch is!?!?!? Feeding twice a day is fine but work to the rule of feed as much as they can eat in 2 minutes. If there's still food in there after this time, cut down. Fish will generally just keep eating, they don't work on the same rule as humans where we stop when we're full or don't fancy eating. Thats why they will always look like they want more and its so easy to overfeed. Remember as well if in doubt its better to underfeed than overfeed.

Just remember it's easier to kill a fish with too much food than to starve one with too little. In the wild, they can go for days on end without finding food. Less food will benefit the water, too. Fish are just very, very good at looking hungry!.

BTW, it doesn't hurt them to go one day a week without any food at all.
