I was wondering since I had fairly small fish (about 1 inch each) and only 4 in my 60 gallon tank, which vegetables should I feed them and how?

2 Gourami and 1 molly

Not sure if gouramis eat vegetables or not. Your molly will benefit from being fed the occasional half pea (cooked, deshelled and slightly crushed) or piece of spinach (lightly boiled and chopped), and will also enjoy an occasional treat of live food (frozen or jellied bloodworm or daphnia). Say veg once a week and "live food" once a week.

so which vegetable is best for small fish???

Try peas. I've tried a few different veg with my various fish and not even the bristlenoses touch the cucumber. *doh* I think maybe mine all have far too much so simply aren't interested but peas often disappear where other things don't. And they don't break apart as badly as cucumber left in overnight does. Blech.
You can also try frozen or freeze dried foods for your fish if you want to avoid feeding alot of flake. I also fine fresh (cleaned and pealed) king prawn is very popular with alot of fish, especially bettas.
Alright, am blathering. I'll shut up now.
Hugs,
P.

My Oscars seem to like peas, Some corn too, Made like corn on the cob but with nothing on it and cooked with not either.

Mollys in particular will chow down blanched cucumber and algae wafers, the gouramis will also benefit from them as well although you have very few fish so pay special attention not to overfeed them and to take out any uneaten food after 15mins.
