Since getting my 4 Corydora, my tank water is much more cloudy from their continual rooting about in the sand substrate... would replacing my current Fluval 2 Plus filter for the next model up (Fluval 3 Plus: much larger filter media) improve the water clarity?

From personal experience i would say yes. I upgraded my fluval 2 plus to an external fluval 204 and the water is now crystal clear all the time. Because the filter is larger and more powerful the amount of times the water cycles through the filter is much greater. The larger filter pads, bio-max and carbon completely get rid of all the rubbish in the water. The output (jet of water and current) was too strong on full but i turned it down and it's perfect.

in my opinion it does make the water more cleaner and clearer. I did it before and my water was way more cleaner.

.. is it definitely particles in the water not a general cloudiness? The latter might suggest it could be bacterial bloom.
If the filter sucks up more waste/ water then yes, it should clear faster. You could also try adding a very fine floss to the filter to seive out smaller particles.
