Got any ideas if this product would work to seal the walls of a diy plywood tank if applied in 3-4 coats?

I've loked at a few local hardware stores (in Canada) and this is all I can find besides epoxy paint (which is twice as expensive).

It may seal it, it may not. The biggest concern would be the product leaching toxins into the water. If it is rated NSF 61/USDA/ANSI/AWWA and FDA certified and
approved it is water safe for coating vessels associated with drinking water, which would make it fine for an aquarium.
