Cycled Nitrite before Ammonia????

In my 50 gal. Tank i have 7 goldfish cycling for me. My ammonia spiked then went down to 0. now my nitrIte is at 5 PPM. I checked the other day and my ammonia was at .25 PPM. So i would just say after its done cycleing wait a day or two and keep on adding a bit of ammonia, until it keeps a 0PPM reading.
 
Canarsie why do you suggest doing a water change, ive been thinking and it kind of makes sense since my nitrite went down before my ammonia???

I think your incorrect because i think the bacteria for converting nitrites into nitrates has already been established, so i beleieve there shouldnt be a nitrite spike again
but the bacteria that convert ammonia into nitrite will still be working therefore yur ammonia will get down to 0 and then yur nitrite shoudl have a small spike and then u should be done

I was impatient.

Not saying it wont go down, but you said you are in day 35? or whatever. My ammonia seemed to be going nowhere or slow as hell.

So I stepped in and 2 days I was good.

Not the right thing but it worked.
 
I seem to be having this same problem with my 5 gallon. My ammonia had been going down as it should but when I added ammonia again on Thursday, nothing happened. It pretty much stayed around 1 to 2.

After finding this on Saturday, I tested for Nitrite and it was 0 while the ammonia was still about 1 to 2. I did a complete water change and then added ammonia again, raising back to 1. That was Sunday morning and it has not changed again, still hanging at 1. Nitrite is still at 0.

What do I need to do to get the ammonia to go down? Do I need to do anything other than a water change and add fish. All I plan to put in it is a betta and maybe a couple shrimp but I don't want to stress them out or kill them. There are 3 real plants in it now, 2 anarchis and a moneywort. All 3 are almost tall enough to be to the surface.
