They usually cut the wings off rays and eat them but dump the rest of the body. The French have a few ways of cooking stingray wings but they tend to keep it a secret. It's meant to be quite nice though and most French people go nuts if you offer them a couple of stingray wings.
Like any other unknown flavor in life, it probably tastes like chicken.
