I have a spare 2ft tank and looking at setting it up as a breeding tank but I am unsure of what fish to try.

This will be the first time breeding them
I know that guppies and mollies breed like bunnies, I was after something a little more interesting

I tried pearl gouramis late last year but had no luck. He had made his nest but she just didn't seem interested.

Any ideas of fish that are easy and what water condition they need would be great
 
Cherry barbs are supposed to be quite easy- a harem of 1 male and 2 females might be about right. Not sure about the water params, planted tank I think.

Another possiblity might be corydoras- here it's the opposite ratio: 2 males to 1 female, condition them well on bloodworm and they should get going. Very nice to watch. You will need a separate small tank to rear the fry. The common ones- bronzes and peppereds- are not fussy about water params.
 
you could try more unusual livebearers like pure endlers (not guppy hybrids) (easy) or halfbeaks (more challenging)

or bristlenose plecs are pretty easy to spawn too, as are some cichlids.
