The most common causes of protruding eyes in fish are a bacterial infection due to poor water quality, the fish banging into something and injuring itself or the fish being harrassed by another fish.
Either way, test your water if you can and do some water changes.
This will help in the case of a bacterial infection and will help stop secondary infections setting in if its a physical injury.
Don't worry if the fish loses the eye; it happens and the fish should recover and live happily with only one eye.
