For some reason, my male betta will feverishly work on his nest (since there is a girl nearby) and he will make a great amount of bubbles... but these bubbles are very very very delicate and will pop when i come near the tank.... what is going on?! I have bred bettas many times, but this is a weird thing to me

Can anyone tell me what may be wrong?

do you have a lid on the tank? If the temp of the air is a lot different then the temp of the water can cause the bubbles to pop. Also some males have bubbles that just aren't as good for whatever reason, try adding some IAL or betta spa this will help make the bubbles stickier and of better quality.

could be any number of things. as jaded says, temperature or this particular males saliva just isnt sticky enough. a draught on the suface of the tank may cuase this, as could the hardnes of your water (like ive said before), indian almond leaf will sort that, as could a little bit of bog root. some floating plants such as duckweed or fairy moss clustered into a corner would give him something to build his nest in and help bind it together.

My water is very hard and Mr Fantastic seems to have no problem making nests - however he does also chew his own tail sometimes and I noticed that when there is melafix in the water to treat this it froths a bit when I pour it in and the nests end up twice as big. You could try a half dose and seeing if that helps the bubbles 'stick'. I know a lot of people use melafix as a tonic permanently so it shouldn't do him any harm.
