I usually see bettas sold with eyes that are a mix of red and blue, sometimes pure red or pure blue. Then I see bettas with pure black eyes, no color at all, you cant tell the iris from the eye. Is this normal, or is this an indication they are sick?

im not 100% sure but i think that it is normal for some. but like i said im not positive!

It is normall in some fish, it's all down to their colouring, in some cases it can mean that the fish has poor eye sight or could even be blind.
To my knowlage black eyes have nothing to do with any sort of disease, cloudy, popped out or mucus covered eyes however are.

I have a female whose eyes seem sort of 'cloudy' -- however, she's been that way for quite a long time now, and it doesn't seem to be hurting her any. ;)

Mr. Wimpy Fish has these GREAT light blue eyes -- wonderful and crazy looking eyes to go with a fish with the same personality. Lols; some Bettas have different eye colours. ^_^

black iris can be normal coloration to some fish. but in a fish that had a colored iris and then it became black-can be indication of fish TB. but as mentioned, some fish naturally have "all black" eyes.
cheers
