Any Ideas as to what this might be? It propagates via runners and currently ranges from 1/2" to 3"

those are the false ghost shrimp, forget what the name is, but watch for young fry or smaller fish as they will grab on to them  they have claws and usually go after fish.. depending on the size though.

same - echinodorus tenellus IMO
 
while it could be Echinodorus tenellus it also has a look of either Lilaeopsis brasiliensis or Lilaeopsis mauritiana
 
hmmm... I guess I'll have to wait till it grows in a little better to be sure.
 
That is Lilaeopsis brasiliensis, good call Kirky.
