Does the ammonia leave the tank with the water that evaporates

No. Only pure water evaporates and all the ammonia, nitrite, nitrate, and minerals in the water, remain behind.

It is best to do water changes if you are worried about ammonia. Do you know about cycling your tank and the dangers to your fish? If the levels build up it can kill your fish.
