I have a 2 1/2 gallon tank, and was thinking of maybe putting a betta in it and placing it on my desk.

but I was wondering what other options might I have to do with this?

You don't really have any other options according to my knowledge. I guess you could put in some snails, but I don't think any other fish.

Unfortunately, not much. Maybe a neon or 1-2 shrimps. A betta, though it can live in small places, doesn't thrive. They, as far as I know, really need at least 5g or more. Maybe a dwarf frog?

I'd definitely put anyone off keeping a neon by itself, they're schooling fish for sure.

in 2.5g you really don't have a lot of options, Snails possibly being the best one.

The vet where I take my cats had a small tank with a couple of male guppies. I've also seen a guppy or 2 in one of those bubble tanks on a wall at a pet store, but I don't know how long that would last. They need filtration to do well. If it isn't filtered I'd vote for an ADF (frog) or the betta. Maybe mystery snails or shrimp. Maybe you could get away with an otto if you have filtration and algae. I wonder if a dwarf puffer would work. A tiny fish i have so far only seen in a book and don't really know much about is the exclamation spot rasbora. I'd like to try them some time, but I don't remember if they need space for a school.
