I recently got a KH/GH kit to test my aquariums.
My 10 gallon betta tank is currently at a KH/GH of 2dH / 35.8ppm, and the pH is 7.

I'm having a difficult time finding info on what's the best range. Is this in an acceptable range? If not, how do I change it?

Note: The tank is still cycling and does not currently have anything besides plants and driftwood inside.

It sounds perfect for a betta, they really thrive in soft water.

KH and GH are completely different things. What is your KH? KH should be high in most circumstances, to prevent fluctuations.

They are both 2dh / 35.8 ppm. Should I try to increase the KH?

Try raising it to around 6-7 using a small bag of crushed coral or boiled & washed seashells.
Luckily I have a readily available supply of seashells living by the beach, I'll try that! Would breaking them into pieces help?
