OK, in all my readings on planted tanks today, I have learnt that if your water is soft and you add CO2 your pH will drop enough to cause harm to the fish....

My KH is 40ppm
My GH is 60ppm
My pH is 7.3

Will my tank be able to handle CO2 without harming the fish? Do I need to add something to increase the GH/KH?

You should read more about CO2 enrichment before you do anything, but yes, I think that tank would do well with CO2 addition. Unless you go completely beserk your ph won't get too low, but if the tank you're adding CO2 to contains African Cichlids the lowered PH will have a negative effect on their health.

I'd go for it, then. If you need to buffer your ph (Which I doubt you will) then you should use baking soda (not baking powder). Calcium Carbonate or Epsom Salts also work.
