I've been keeping a record of my cycle online, for reference. Obviously it has stalled at the start as I was messing around with it. But now it just wont change!

Looks normal to me. The nitrite can seem to take forever to start going down then over the course of a couple of days it will suddenly drop to nothing. In my experience most tanks take about 2-3 weeks to cycle (3 weeks being the norm for me). Give it another 4 or 5 days and I expect you will see it almost finished.
