It is perfectly safe to leave in there overnight, I leave mine in there until its eaten or until when it goes really soft which could be two or three days. My fish love courgette more than cucumber you should give it a go (zouchinni in the US) Ps. The spelling is wrong i know.

its ok to leave it over night for one night

FYI - I left a piece in my tank overnight, it was ok the next morning - I came home from work that night and the cucumber has disintegrated into this mushy pulp

I thought I had got most of it out with the net - how wrong was I.

Approx 1 and a half weeks later - my filter just died. It had a very slow flow, hardly moving the water at all.

I removed the filter - and cleaned the whole unit - I used about 50 cotton buds remove slimy cucumber residue from the filter outlet and motor

Be Warned. It was gross.

I feed my fish a good chunk of cucumber, knew the plecs might like it, but the clown loaches go absolutely mental over it. Not just one chunk either, but 2 slices 3 times a week - all whats left in the morning is the rind.
