Are crabs affected in the same way fish are when cycling a tank?

I don't know for certain, but I would imagine so.

Ammonia isn't perticularly good for any living creature

Ammonia, nitrite and high nitrate is toxic to freshwater invertebrates. SH

Invertebrates are usually more sensitive then most fish.
