I was wondering if daily water change cause stress, my nitrate is really high lately.

As long as the pH, GH and temperature of the new water is similar to the old water, it is fine to do a 75% or even bigger water change each day.

The new water must be free of chlorine/ chloramine before it is added to the tank.

If your nitrates are high, check the tap water for nitrates and make sure you gravel clean the substrate each time you do a water change. You should also reduce the amount of food going into the tank and or reduce the number of fish in the tank.

What Colin said.
Only caution would be, IME of water changing more than 75% my fish have lost colour for an hour or so. It also caused all my cryptocoryne to die back.
But 75% has never caused me any concerns.

Better question is why is your nitrate high. Once you figure that out the solutions will be attainable.
