I did see them, but they don't look as big! I'm going to ask them for a few more pics of the more expensive, larger pieces to get a better idea of size and shape. Showing one side doesn't give you a good feel for the piece in all dimensions.

They're just different types of wood, if you google the 3 names you'll get a feel of how each one looks.

My local MA has something similar called Sumatra Wood. It has the same twisty branch look.

If you're ever in north london, you can try the aquatic design centre. Pricey but they do stock ones like that, all diff sizes...
