When to separate... is it wrong to move?

I have approximately 25 one month old (today!) guppy fry in a 3.5 gallon tank. This is the tank that they were born in, and are doing good. I do frequent water changes, and the temperature is about 75 degrees Fahrenheit. I only have 4 guppies, two males - two females, and a female betta in a ten gallon tank. I was thinking about moving the adult guppies (the red tail female is actually the mother of all of the babies) to the 3.5g and all of the babies to the 10g so they would have more room to grow and swim around and be happy. I'm debating on whether or not I should do this, and if I should keep the betta with the adult guppies (they get along great btw).
I was also wondering when the guppy fry need to be separated male // female so their won't be any interbreeding, and at what age it will be easiest to tell... I was thinking about just putting a divider in the 10g when I do this. I have people who want the babies already when they get bigger, plus my boss said it would be cool if I set up at tank at work (I work at a Day Care) and use it as another fry tank, or breed them too. That would be great because the day care would pay for what ever I need to keep the tank going healthy. They already got a 10g tank and set it up in the Kindergarten room, waiting for me to do whatever (cycle the tank, though they don't know it).
Any opinions/suggestions...?

I would wait till they were month and a day half or even two months old before you let the kids go back with mom and dad. I tried introducing my fry back to the community tank at one month and even though the fry looked big, the parents still chased it. Luckily i got him back out. Never under estimate, be patient
As for seperating sexes, I've heard from the time you can tell them apart, seperate them at once b/c im sure you dont want inbreeding. I've also heard at 3 months guppies are sexually mature, so go with your instincts here.

I didn't mean I wanted to put them back in with the adult guppies. I ment to put the babies into the 10 g tank and the adults in the smaller one. Switch tanks...
