i got a pair of dalmation mollies, male and female and was wondering how to tell when they are about to mate, etc

So you mean about to mate or about to give birth?
They mate basically all the time, no real need to tell. You can tell the mating has worked when they get fat.
EDIT:
Sorry, I just noticed you said a "pair" all livebearers should be kept with 2 females to a male or even better 3 females to a male.

the male dances around the female erecting his dorsal fin then is part of the mateing dance.

He then go's behind and below the female and then he'll mate
