Do you know what type of lovely guppy this lady is? Bought her a couple months ago and she’s produced two extremely healthy and fast growing batches of fry. (Her gills are always red; I assume it has to do with her yellow coloring since she behaves perfectly fine and none of the other fish in the tank have red gills)

Does she have a red eye or a brown/ black eye?
A red eye would make her an albino. they have less pigment in the skin and you can see the gills easier.

I actually can’t tell. The iris seems pretty white. Would that be considered a red eye? My albino cories have distinctly pink eyes so I’m not sure if white counts. Her uterus also looks red, rather than the dark grey/black of my other guppies

Well, she's got a blond base color. In combination with the coloration of her fins, she could be a female coming from flamingo guppies which are sold frequently on the commercial market.
For those who think she could be a sunset guppy, a female sunset guppy should have a blond base color but the fins should carry orange (or red) with yellow (which is lacking over here).

No, she's got black eyes. Which means that she's got melanophores (dark color cells) in her eyes. If she's lacking those, then she'll be albino. But if they turn out wine red ( a bit of darker red), then she's having a small percentage of melanophores. In that case, we're dealing with a WREA guppy. WREA stands for wine red eyes albino.
But in your case it's just a black eyed female.
