With water wisteria, it grows like other stem plants - you can cut and replant the stems. You might notice some new roots coming out of the nodes when it's moved to a new environment. It's a faster grower and you might need to trim it very often.

Water sprite on the other hand grows new leaves from a crown/rhizome like ferns. Also, new plantlets (offsets) form from the edge of older leaves.

This is found in one of the pinned articles on common aquarium plants.
Wisteria - Hygrophila Difformis A beautiful and undemanding plant for beginners. Helps create a balance in the aquarium because of it's rapid growth it helps prevent algae. The plant absorbs a great number of nutrients from the water. The shortage of micro-nutrients leads to pale leaves, which may be an indication that the aquarium needs fertiliser. Temperature .. 22-30ºC, pH tolerance .. 5-9pH, Hardness tolerance … soft-very hard. A very easy and fast growing plant.

I have kept water wisteria before but never had much luck keeping it alive  It bruises easily. And with my tank's poor lighting, the bottom leaves die quickly
Never kept water sprite so cannot comment on that :)

Wisteria.
That's how they look when they arrive at the LFS. Sold countless amounts lol.
