They provide a more natural environment for your fish, which reduces their stress and makes them more comfortable, this is especially true of shy fish. They also directly remove compounds like ammonia and nitrates from the water, resulting in cleaner water. Plus, during the day while photosynthesizing, they release oxygen directly into the water. :thumbs:
 
Hiding places, definitely. Certain plants are also good homes for microscopic animals that are eaten by fry.

As for the plants converting the nitrates into food, that's true, but it won't put a dent in the amount of nitrates you have. You'd need a heck of a lot of plants in your tank to stabilize the ecosystem, so I wouldn't rely on them for that.

They also make good sources of food, but you're not looking for that, now are you (esp. since the fish that are best at eating them are too big for your tanks).
 
I'd agree with the above. You will need a lot of plants which are growing well to acheive a significant reduction in Nitrates. Floating plants are one the best for this as they tend to grow quicker due to the extra light and co2 they receive, they also use up phosphates which will in turn suppress algae growth.
 
In addition to what the members posted above I'd like to say that my plants do eliminate nitrates. I have some well-planted tanks with high light and CO2. In order to keep plants healthy I must add nitrates to the tank.

As others pointed out, unless you plan on a similar setup, I wouldn't expect the plants to consume that much of your nitrates.
