id be a bit conserned about the nitrite reading of 1, this level is high and shouldnt be above 0.25 or it could cause damage to the fish, id do some large water changes to get the level down to a safe level
Nitrite takes roughly twice as long to go as ammonia did so don't worry too much. cycling can easily take 6 weeks so you've nothing to worry about if you're not finished at 3.
Have you tested your tap water for nitrite? It should definitely be reduced after a water change. If there is no nitrite in your tap water and it doesn't change after a water change, then I'd say you test kit is faulty. Are you using liguid or strip tests?
What are your readings from your tap water? The fact that the water changes aren't having an effect on the nitrite leads me to believe you may have nitrite in your tap water.
