It depends on how stocked it is and how long it has been set up and various other factors, but most recommend doing a 30% water change for a light to medium stocked tank (no big waste producing fish or critters) or a 40-60% water change once a week for a fully or heavily stocked tank or one with big waste producing fish or critters .
If you tank is newly set up and cycling with fish you will have to do water changes more regually than what you would do with a mature or stable tank, if your tank is cycled or mature you should just stick to a once a week water change (as long as water quality is good i.e. 0 nitrites and ammonia and nitrates 40 or under .
Also remember to clean your substrate once a week and to roughly clean your filter sponge in water from water changes once every 10days to 2 weeks or more (it depends on how powerful/large your filter is in comparison o your tank size and how stocked your tank is and so forth etc).
