Unplanting A Tank

i have planted my tank with vallis, and two huge crypts.

The vallis has spread across the whole tank now, and i have too much, i cant see the fish!

can i take it out in 1 go, or will i alter the water chemistry too much?? I want to replace with much smaller plants, but cant afford to buy them all at once, so i will replace whats taken out, just not straight away!

when disturbing the substrate, it releases a small amount of undetectable ammonia so do an 80% water change after to prevent algae attacking.
