The reason why you have a nitrite reading is that you are cleaning the sponges to much, should only touch them every few months, you only rinse the filter mating in old tank water, or replace it with new, once a week.
Bent spines if not born that way is fish tb to internal parasites.
But with the other symtoms of the scales it sound more like fish tb.
Check the anus of the fish to make sure there not enlarged or red and inflamed.

I will stop cleaning the filters each week.

I have had a look at all the fish and there is no red around the anus on the fish that I can see.

Just hoping for no nasty surprises in the morning.
