after doing some reading i think im going to set my tank to 75f

I would say 78-80

Lake malawi cichlids come from water that ranges from 70F to 80F (25.5 to 28C).

I was going to set it at 75c as we are now in summer months and tank temp can rise a bit and then in winter months it should not drop below 75....would this work..?

Yes you could do that, mine are at 78 at the moment.

Feed them quality food aswell. You can buy colour enhancing food from shops and ebay, etc

You want to heat the pan to about 300 degrees then add a drop of oil and chuck them it in skin side down should be a lovely colour, golden and crispy. Don't over cook though.
