In the early stages of setting up a new tank it's often worth checking your water stats just before and just after a water change. Just to see how high your levels are getting before you are doing your change and whether you are changing enough water to drop them down to safer levels. Your nitrate should not really get much above 30ppm and ammonia and nitrate should be non existent at all times. Your water change should be about 20% of tank volume per week. This of course depends upon many factors such as stocking levels, filtration, feeding, species stocked etc. but 20% is a ball park figure to aim for.
