OK i'd like to use ADA amazonia as my substrate, but have read in countless places that it causes an ammonia spike. Problem being that the water out of my tap is 0.5 anyway, so any more than that is gonna kill my fish surely! Does this mean i'll have to rehouse the fish during the rescaping?

I just stick with Irish Peat Moss! Sorry, not heard of ADA Amazonia.
 
Not really if replanting then do daily water changes and monitor ammonia till it drops of and your filter as handled it.

Sorry, but in that case, why comment? :/

ADA Amazonia does leach a small amount of ammonia to begin with, but this is taken up by plants or dealt with by the filter. Remember your filter deals with ammonia from the fish every day. Heavily planting the tank from the start when you change the substrate will also help as there will be more plant mass to absorb the ammonia.
