The water parameters seem fine, yet they are jumpy... do I add salt? If I do, how much? Is there other solutions? (I have cories so salt may be a no no...)
 
Well not enough to go on which fish are jumpy, have you added any new fish in the last week,
Can we look at your stats, are the fish flicking and rubbing, and are they heavy breathing.
 
My stats sit as this:

PH- 7.8-8.4 (very high im aware, how can i reduce this?)
Alkalinity- 300 (very high as well, how can i reduce this too?)
Hardness- 150 (hard)
Nitrite- 0
Nitrate- 20 (safe)

I have a parrot cichlid, 2 sailfin mollies and 2 cories.. know I kinda know why these guys are jumpy. What can i do to fix these levels? at what levels should these measurements be?

Whats your tap ph, they could be jumpy as they might have a parasite, any signs of laboured breathing, or flicking and rubbing against objects.
 
they are not labored when they breath, the tap PH is of 7.5, and they do not scratch against objects at all... :(
 
Well something is wrong as your tap ph shoudl match your tank, what test kits do you use.
As its' sounding like you are not maintaining it enough.
How long has the tank been set up.

what are your rocks in the tank? some rocks can increase your PH of the tank.
