Ok... So I noticed a couple weeks ago that the water in my tank has dropped about a 1/4 inch. I start freaking out and check around all the bases, underneath, the carpet, for signs of leakage. Nothing, nada. Is my light just too low and evaporating the water? I'm very confused. I filled it back up and it slowly is doing the same thing.

Also, I took a water sample to my lfs for a free testing. They told me it was strange because my nitrate levels were way higher than my nitrites? I thought the nitrites are broken down into benign nitrates anyway, so why would this be alarming?
All levels are safe though, and fish are getting long 'swimmingly'.

Should I be concerned about any of this?

When you say slowly doing the same how slowly is slowly? The water from your aquarium will evaporate over time, its just a natural happening.

Regarding your nitrates you're correct, the nitrogen cycle goes;

Ammonia -> NitrIte -> NitrAte

I would suggest the next time you take your water to your LFS to get actual numbers and then post them here. That or buy an API test kit as these are very good and very accurate.
