I've had a Coral beauty for a week now, but i've hardly seen him.

I've read they can be very shy at first, but will he become a bit more adventurous do you think (I know all fish are different)

I've also read they will eat algae and bits off the LR, but he's not taken any food yet, that i've seen anyway. He looks healthy and is swimming around, but only behing the LR.

I've put some nori in but he's not come out to see it.

Should I be concerned or is this natural?
 
Give it time.. the more liverock for it to feel happy to hide in the bolder it wil become.
 
My coral beauty took about two weeks to get settled in. Once she figured out her "spot" in the tank, I saw her almost constantly. She has a little hiding spot in the back of the tank, in some macro...she sleeps there, takes food in there, etc. Once it gets settles in, it should be fine.
