When shrimps shed their skin they'll often hide until their new skin hardens as they are vunerable during that time.
Mine are often hiding around the tank, usually in the wood that i have. Often i cant find all my shrimp either, although one did jump out of the tank a few days back.
I think shrimp get stressed easily when being introduced to a new tank so that might also have something to do with it if they are dead.

Did you cycle the tank properly before adding fish ? Or have you added any medication to your tank? The shrimp are sensitive to copper.
