There are very good good shrimp care guide here in this forums so I'm not gonna repeat whats already been written better and more complete that i can.
I've started keeping shrimp (thanks to this forum  ) for a little more than a year ago, so I'm by no means an expert.

I have CRS's, Red Cherrys, Amano, and Bamboo shrimps, but believe it or no my favorite one is still the Ghost Shrimp.
Out of all the shrimps i kept i only lost Ghost shrimps. It seems that no matter what i do they start turning white and than die.
There isn't much info available online regarding ghost shrimp cause of death except for water quality, but my water quality has always been good and stable.
I turned to reading all the ingredients on the foods that i feed all my shrimps and it turns out they contain COPPER:
http://www.amazon.com/Wardley-Premium-Shrimp-Pellets-Ounce/dp/B00025Z6MK
http://www.petmeister.com/item1207.htm.

I stopped feeding them these food and refilled the ranks of the M.I.A's. After a week my new batch seems to start showing the same problem -> Ghost shrimps turning white. Out of desperation i started turned to web and started doing a little more in depth research and found that some widely and common available fertilizers also contain copper except it no where on the label or description: API Leaf Pro for example
http://www.regulatory-info-api.com/PDF/LZ%20Metals%20mu%20sntzd.pdf
All of my shrimps seems to tolerate the foods and fertz except for Ghost shrimps.

So in short: Make sure you read and research what you put in your little creatures tank. Just cause the product label didn't mention certain chemicals in it, doesn't mean it doesn't contain one.
