I kept some of those in my 3 gallon once, and theyre so much fun!

Theyre quite small - a male grows up to 1inch, and a femaile grows up to 1.5 inches...

The amount? hmm not really sure - I would keep about 3-4

and if your keeping a couple of fish in there, i would keep 2-3 as a max.
if your keeping fish with them, give them somewhere to hide when theyre molting.

Im sure you can, but cant say as i only kept 3-4 with some fish and they were fine. I think 6 would be great!

(apparently they can get up 3 inches!) I would definalely want more, but my lfs doesnt do them anymore (they tend to escape from tanks without hoods)

Have a plant in there for your shrimps to hide in also.

I would wait till someone more knowledagble comes along and posts as im still a begginer

There are few shrimps on this link to get an idea of what's out there. I would go with Cherry shrimp.
