Setup For Rams

i am currently thinking about keeping a pair of rams. i was talking to my local dealer, and he said that a sandy bottom and pH around 6.4 (i think) is best. Is this right? Also how would you keep the pH at 6.4? would i just have to use those packets of pH buffer? Sorry to add another question, but which is the most reliable method for sexing rams?
